Putting Food By

(Paperback) (19 reviews)

by Janet Greene (Author), Ruth Hertzberg (Author), Beatrice Vaughan (Author) "To "put by" is an old, deep-country way of saving to "save something you don't use now, against the time when you'll need it..." The fourth edition of this classic guide to freezing, canning, and preserving food includes new information on freezing for the microwave, making Christmas presents, canning convenience food, and kitchen equipment. Reprint.

"Preserving Summer's Bounty - Take a look at this book (at right).  It's by Rodale Press (remember Organic Gardening magazine and Prevention Magazine?).  "Preserving Summer's Bounty takes a giant step ahead in preserving advice. This up-to-the-minute guide pays tribute to your grandmother's techniques for 'putting up' vegetables, but what I like best are the quick and easy modern methods using the microwave, the freezer and more. These fast answers should lure even the busiest among us into storing the precious harvest of the garden."--Marian Morash, Author of The Victory Garden Cookbook

"Preserving Summer's Bounty is a treasure trove of sage advice and enticing recipes. It's a delightful book that will let you enjoy your garden's harvest all year long."--Carol Hupping, Editor of

If your looking to expand your repertoire and stray from the usual jams, jellies, marmalades and chutneys, this book has what you need. As it says on the Amazon review, these 250 recipes have a slightly more gourmet approach, embracing unique combinations and less traditional ingredients.  They are explained in easy to understand terms with helpful conversions and tables!

The Jamlady Cookbook

(Review from Cheftalk.com / Publishers Weekly)
Alfeld's enthusiasm for "putting up" nature's bounty and her background in organic farming, teaching, science and cooking make her the perfect instructor in this book on canning. She assures readers that creating homemade jams, jellies, butters, chutneys and relishes can be safe, satisfying and, of course, delicious. Although hers is not exactly a book for beginners, an early chapter dealing with processing methods and general troubleshooting, and a later one on pH measurements (essential for safety) are indeed thorough. In between are several hundred recipes, incorporating a diverse assortment of fruits and vegetables, all of which have been tested on Jamlady's admiring customers at Chicago's farmers markets. Novices will enjoy making Classic Pineapple Jam, which uses canned fruit; and speedy Microwaved Orange Marmalade. However, Jamlady's heart is in the more complex concoctions, such as Marnier Strawberry-Peach Jam, Tomato-Basil Jelly (nice on hamburgers), Nectarine -Almond Conserve and Pear Honey. Alfeld (who refers to herself as Jamlady) stocks each chapter with how-tos, ingredient information, sources, history, chemistry, philosophy, family stories and humor. Color illus. (Aug.)
