Unfortunately, there is no cottage food law in Canada. Guidelines on how to get around that )legally) vary by province.
Food preparation in other Provinces or not meeting the definitions above must be done in a licensed food premises. As you can imagine, that can be expensive... but there are cost-effective ways to do it.
In those cases, viable alternatives include using commercial kitchens (as cheap as
$10/hour) as a licensed location to prepare the foods or co-packers to prepare and package the food for
you.
Beyond the requirements, common sense, good practices and reducing liability suggests you should do the following.
It's best to use a pH meter, properly calibrated on the day

instead, if the product normally has a pH of 4.0 or lower and the
